I have seriously dreamed about this casserole for months, but my pre-wedding diet wouldn't allow it. Cheese, potatoes, butter, sour cream, onions--what's not to love, except the calories? However, I've come up with a way to make it a little more healthy: adding broccoli (and bacon, shhhh)!
The original recipe is from Food.com, and can be found here. That recipe is for a side dish, but my adds make it into a full-blown dinner. And it couldn't be easier, basically you just throw everything into a big bowl, stir, then dump into a baking pan and cook!
Here's the recipe, with my additions bolded:
2 lbs frozen hash browns
1/2 cup margarine, melted
1 (10 1/4 ounce) can cream of chicken soup
1 pint sour cream (I use fat free)
1/2 cup onion, peeled and chopped (I think I used closer to a cup, love onions!)
2 cups cheddar cheese, grated
1 teaspoon salt
1/4 teaspoon pepper
1 package of Birds Eye Steamfresh Broccoli, microwaved
2 3-ounce packages of Foster Farms cooked chicken strips (or you could not be lazy and actually dice and pan cook chicken. I'm lazy.)
8 strips of cooked bacon, cut up into little pieces
Put everything into a big bowl and stir it up!
Spray a 13"x9" baking pan with Pam, put the mixture in the pan, and bake for about 45 minutes at 350 degrees, or until it starts to brown on top. It's really good served with a little ketchup if you like too!
Another four nights of dinner taken care of! It's a good thing I started back up with the 30 Day Shred this week (well, doing it twice a week), to make up for these calories. But totally worth it for the ease and delish factor of this casserole!

Umm, that looks amazing! I make an egg, cheese and hash brown casserole every year for New Year's Day brunch . . . but this post kinda made me want it for dinner tonight!
Thanks for the invite to the pub crawl! Sounds like so much fun, but I've already committed to a baby shower on Saturday (the pub crawl sounds waaaaay more fun). Let's get another drink again soon!
