What can I say,
But I have thrown together this super quick recipe that I thought I'd share, if any of you are too lazy to do much cooking like I am. This has got to be hands down the quickest possible way to make yummy stuffed peppers--only 5 minutes of prep time by using some short cut ingredients!
First, gather your ingredients.
4 red peppers (the recipe makes 4 servings, but for my husband and I, we just save 2 peppers and half of the stuffing for the next night)
1 packet of 90 Second Ready Rice
1 package of pre-cooked chicken breast (usually found by the sliced sandwich meat)
1 cup of shredded cheese
3/4 cup salsa (or a little less or more depending on how you feel)
1/4 cup diced onion
Sour cream to taste
First, turn your oven on to 350 degrees. Throw the Ready Rice in the microwave for 90 seconds, pre-heat a small skillet with a little olive oil, dice your onion and throw it in the skillet for a little light browning.
In a bowl combine your pre-cooked chicken (I like to tear it up into smaller pieces), cheese, salsa, all the while occasionally stirring your onions in the skillet. Add the rice once it's cooked.
Rinse your peppers, chop the top off of them, and cut out the innards. Give them a second quick rinse to make sure all the seeds are washed away. Add your onions to the bowl and stir everything together.
Then all you have to do is stuff the contents of your bowl inside the peppers with a spoon.
Place your stuffed peppers on a cookie sheet and top them with a little more shredded cheese. Done and ready to put in the oven, in only 5 minutes! Even someone as lazy as I am can handle this, especially when I only have to wash a bowl, skillet and spoon afterwards.
Bake your peppers for about 25 minutes, or until they look cooked and ready to eat.
Add a spoonful of sour cream if you like before serving. My husband even likes to grab a handful of tortilla chips to eat with the stuffed peppers.
Enjoy! I'm sure this isn't a drool-worthy Pinterest recipe, but it is super easy and super yummy. And I bet if you serve this, nobody will ever know it only took you 5 minutes to throw together! ;)

P.S. Obviously it will be different if you use different brands of ingredients, but the way I made these they equal out to be 378.75 calories each.

LOVEEE Stuffed peppers! If you want to make them a bit healthier you can substitute quinoa or barley for the rice and no-sodium tomatoes for the salsa then throw in some kale/spinach :)

Ok, can I ask how the peppers themselves taste after baking? I LOVE sweet peppers, I will cut them up and eat them raw. Hubs on the other hand doesn't really care for them. i want to make these, but want to make sure he will actually eat it. Maybe instead of stuffing them, I could cut them up and make a "salad" and bake it that way? I feel like he may eat it like that....or I could just tell him to shut up and eat it cuz I made it for him ;)

These look great and it's amazing that they are so quick and simple to put together. When I don't want to cook, I just make a huge salad for dinner - it's quick, easy, filling and healthy. Plus we always have a ton of fresh veggies in the house, so it's a no-brainer.
Ok, I officially need to look up what the heck quinoa is, now that you've recommended it. I keep seeing people pinning recipes with it, but I've never heard of it before recently!
Once you bake the peppers, they become softer, with a little less 'bite' to them. Not that red peppers have that much bite to begin with, but the pepper flavor does get more mild when you cook them. And if your hubs doesn't like peppers that much, I definitely think you could just throw all of the ingredients into a baking dish and it would work well too. Then he could eat around the chopped up peppers if he wanted too (or maybe not notice them and actually eat them!) and you could still get your sweet pepper fix! :)

This looks tasty! Ill have to try this. Last time i made stuffed peppers i confused recipes and ended up making meatloaf peppers :P still good though lol
I make mine with green peppers but I will steam them the night before. Put them in a baking dish with an inch of water or so, cover with foil, and back for about 20 minutes so they steam nice and soft.
The next day when I get home from work I can stuff and bake for maybe only ten minutes.

Those look really tasty! And I'm very similar about cooking, though even appetizers are difficult for me to get excited about sometimes. I have a few go-to meals that I like cooking, though I'm slowly trying to expand my repertoire. :)

Stuffed peppers is one of my favorite easy meals. Unfortunately, we don't own a microwave so the rice portion of it always takes me much longer!
