So Avo-cow-do Dip was born!
Avo-cow-do Dip
Makes 4 servings, 62.1 calories per serving
- 1/3rd of an avocado
- 2 wedges of Laughing Cow Garlic and Herb cheese
- 2 slices of bacon (we used Hormel Microwave Ready Bacon)
- garlic salt and pepper to taste
- a few drops of sriracha sauce (optional)
Mash avocado and Laughing Cow wedges together in a bowl with a fork. Cook bacon and crumple it in the bowl. Stir in as much garlic salt, pepper and sriracha as you like. Serve with chips or crackers (we ate it with Whole Wheat Ritz).
So creamy and avocado-y, with little crunches of bacon and a slight spicy taste from the sriracha. And so quick and easy to make. I have a feeling this dip will be making a reappearance in our house again soon!

Mm that's a great idea - it looks tasty!
Yum - that looks and sounds really good! My husband likes to make "healthy" versions of dips, like healthy hummus with no oil. Definitely not as delicious as what you made, but his dips usually get me through my snack cravings in the afternoons :)

Looks like a tasty dip! I think the only dip I've made started with a package (that I picked up from our trip to NOLA and the cooking class) and added some other ingredients.
I *love* Laughing Cow wedges. I toss them into so many different things for a dose of creaminess without the heaviness of real cream!
Oh wow how delicious!!! I was out of salsa on Sunday so I whipped up some guac as well. It wasn't all fancy and bacon-laced! Siracha in there sounds YUMMAY!
