So I wanted to share it again, just in case you weren't reading back in 2010 when I posted it the first time. Also, it will be easier for me to remember to make it more often, with it at the top of my post list again!
Chicken, Bacon and Broccoli Hash Brown Casserole
Makes 8 servings and takes 10 minutes to prep, with a 45 minute bake time.

Ingredients:
2 lbs frozen hash browns
1 package of Birds Eye Steamfresh Broccoli, microwaved
1 package of Perdue Short Cuts Carved Chicken Breast (or you could not be lazy and actually dice and pan cook chicken. I'm lazy.)
8 strips of cooked bacon, cut up into little pieces (use pre-cooked here too if you want to save even more time)
1/2 cup margarine, melted
1 (10 1/4 ounce) can cream of chicken soup
1 pint sour cream (I use fat free)
1/2 cup onion, peeled and chopped
2 cups cheddar cheese, grated
1 teaspoon salt
1/4 teaspoon pepper
Combine all ingredients into a large bowl and stir well. Spray a 13 x 9 inch pan with cooking spray and bake at 350 degrees for 45 minutes or until starting to brown a little on top. Serve with ketchup.
And here is the calorie count breakdown, which I didn't even think to do the first time I posted this recipe. 438 calories for a very filling serving isn't too bad for dinner, and I usually serve this with a spinach side salad.

Except for the broccoli, it sounds pretty good! Would it change the consistency too much to change it to another vegetable, maybe peppers?
Nope, you could throw whatever veggies you like in there! The cheesy hash brown base is the perfect place to hide veggies from my vegetable-hating husband. Peppers sound really good. Carrots as well! It is a pretty forgiving consistency, so even leaving the broccoli out would work just fine. :)
This definitely sounds like great comfort food! My husband would love it.
