Happy Valentine's day everyone!
It's not very fun that it falls on a Tuesday this year, but my husband and I don't usually do that much to celebrate anyway. And this afternoon we'll be doing our last round of more in depth house inspections, so I know I'll be short on time tonight to make a fancy dinner.
But I'm still going to try to whip together something!
I've decided to keep it simple, and go with several finger foods/shareable tapas. This will make it easy on me when I don't have much time tonight to cook (plus I still have to go to the grocery store!), and hopefully also be yummy. Just add candles to any meal, and it's romantic to me! ;)
We'll start with a salad of some kind. It will include avocados, and maybe I'll find some strawberries at the store to give it a hint of Valentine's Day red.
Then, will come the two main courses to share. Smoked salmon, with capers, green and red onions, on a bed of gourmet potato chips, and topped with a drizzle of Avocado Dill Dip.
Our second portion of the main course will be warm, Baked Crab Rangoons. This is the part of our Valentine's Day diner that takes the longest to cook, baking for 15-20 minutes, but I'm planning to prep the smoked salmon while the rangoons are in the oven.
Finally, for dessert, I'm keeping it simple. My husband asked me at Christmas time why I had to make such fancy cookies, and couldn't we just have peanut butter or chocolate chip. Well, obviously, since at Christmas I was baking for a cookie exchange, it had to be fancier. But for him, I'll grant his wish, and am going to bake him peanut butter chocolate chip cookies. I might have to stick one of those mini Reese's Peanut Butter cups on the top, just to make it a little fancy though!

We're totally having salmon, too! Roasted with Brussels sprouts and I think I'll make herbed carrots, too.
I'm going to try and sneak some cookies into being made for surprise gift and we're going out after dinner just for dessert and a drink. Then it's snuggle in front of the fireplace time!

Sounds like a sophisticated yet sweet meal plan! I don't think we'll be doing anything fancy tonight as I've had a wicked flu as of yesterday and don't have an appetite nor do I feel particularly lovey dovey or cutesy... but perhaps I'll pop out and get Dave a box of chocolates. Have a good night!
Crab rangoon is my FAVE! Love your idea of putting strawberries in the salad, yum!
Sounds like a great meal, and I'll definitely have to bookmark that salad! I have class tonight, so no special plans for us. We had our wine and fondue night over the weekend.
