Yep, still trying to eat healthy!
Here is what we will be trying over the next 20 days:
Like last time, the recipes are here, but I'll probably be taking notes on what did and didn't work about the recipes. This is way too many meals to go shopping for all at once though. Eating fresher food means I'm just going to have to cave in and go to the store more often. But it will be worth it for the yummy food and health benefits. We've already had the peach-whiskey bbq chicken, and it was a home run. The sauce has a good amount of calories in it, but you don't really eat more than a quarter of the sauce, mostly it's just for marinading the chicken while it cooks, so calorie-wise, it's pretty good.
And on that note, I've started counting calories again. It's a huge pain, but eating healthy is hard when I have no idea if I'm supposed to feel full or not with eating all of these veggies. I've had a few days where I ended up eating less than the daily recommended amount, so I think this will be worth the effort, if only to track how many calories are in each of these meals for future reference!
Oh, and while I'm here sharing this little healthy eating update, I thought I'd share a quick recipe I've tried twice now for lunch. I've been seeing a ton of recipes for egg baked avocados, but to be honest, I'm getting a little tired of eggs lately. So I thought I might as well sub in some Siracha and bacon to change things up.
All you need is 1/2 an avocado, Siracha sauce, 2 slices of bacon, a sprinkle of cheese and some garlic salt and pepper to taste. Broil for 3-5 minutes and enjoy! 235 calories.
Yum! I definitely won't be eating this everyday, since I've usually just been eating a big salad, but it's nice to have other options. Especially when they involve avocados and bacon, which you already heard about how much I love when I made them into a dip.
Also, my husband was being a smart ass, and all like "Don'tcha wanna take a picture of myyyy lunch?"
Yeah, no, that is a boring sandwich. My lunch involves bacon thankyouverymuch.
Luckily sliced bread doesn't tempt me at all, not like garlicky french bread. That isn't allowed in our house right now. :)
So now I'm exploring what else I can do with avocados. Anyone have a favorite avocado recipe they want to share? I'd love to try some new ones!

Yum! I love avocados, and your looks great. No recipes to share, but I'm a sucker for guacamole and chips :)
My sister makes a fantastic avocado salad. I'm pretty sure it's just romaine lettuce, chopped avocados, salted sunflower seeds and garlic croutons, with caesar dressing, but she always makes it when I go visit her. She won't let us put anything else in it. :)
That looks so good, Morgan! YUM! I like making avocado mayo spread with a bit of horseradish. Also, my avocado fries I made a while ago. I want one of your broiled ones now!
I also need to plan more meals.

Yum! That avocado looks great! I have done that same thing with a half of a tomato before but never with an avocado. I'll have to try that.Mmmmm bacon. Are you okay with eating the same meal multiple days in a row? I think I'd go crazy if I did that, but that's just me. :)
OMG avocados are my jam!! I love them on and in everything, and will also just eat them plain right out of the shell. I like using it as a sub for mayo on sandwiches, also in egg salad (we eat a lot of egg salad and deviled eggs, so its nice to have a mayo sub). What you made looks delicious, I would pick that over a boring old sandwich any day! I also LOVE putting it in my salads as well.

And yeah, I can deal with eating the same thing for about 3 days in a row, but no longer than that. Some of these recipes take like an hour to make though, so it's more efficient to just make enough for a couple of nights, especially when I can plan it around not cooking on nights when we have stuff going on. But yummy, evil, delicious carbs like pasta were so much quicker and easier to make!
I will put avocados on just about everything too! And I only recently discovered using avocados in deviled eggs instead of mayo. It's so good, I can't believe I never thought of it before!

I'd say with the bacon, it was filling. But I usually try for around 250-300 calories for lunch, and that was almost in that range. I do usually eat a snack in the afternoon though, especially on days when I'm planning on jogging in the evening. So I don't think just the avocado would work to keep you full all day, but it keeps me full for ~4 hours until it's snack time!
